Creating interactions

Interactions are where you cross two (or more) categorical variables so that you expand the number of categories. This is the same concept of 'nesting' whereby you 'nest' one variable within another, leading to a multiplicity of categories. For example, if you have an Age variable (4 categories) and Gender variable (2 categories) you'll end up with 8 categories in the interaction (Males 18-29, Males 30-40, etc).
